Friday Food File: Nachos

Hi guys, how it going?

If your a lover of Mexican food  like me and love nachos then I have a easy recipe for you all to have as a Friday night dinner. It's pretty simple and easy to make.

Friday Food File: Nachos


Ingredients:
1-2 handfuls of shredded cooked chicken
1-2 bags of corn chips of choice.
1 can of mild/medium salsa.
 Handful of mozzarella cheese
Optional Ingredients: black beans, jalapenos, sauté onion and capsicum.

Method:
1. Tear chicken off into shreds and put into a mixing bowl.
2. Put salsa in and mix in with the chicken.
3.Lay out corn chips onto the tray
4. spoon out the chicken and salsa mix on the chips.
5. Put after handful of mozzarella cheese over the corn chips and salsa mix.
6. Place into the oven at 180c for 10-15 mins or until cheese is brown.

Then serve with sour cream or any sauce you like!

5 Ways of Giving Back

Hi all, how's it going?

Happy Valentines Day! If you celebrate this day with your partner or you don't like this day it's a day people love or hate. I believe that giving back is another way of showing love to others- I have come to realize that at the age of 22. 

Here are five of the ways you can give back:

Volunteer/Giving a hand:
Volunteering it's a awesome way to give back, whether its helping out a local community event or helping a friend out. I,myself have participate in community events during my event management studies as well as helping my sister moved houses.

Give blood:
Giving blood or the idea of it is scary for some. I have been a regular blood donor since I was sixteen but haven't this year due my iron levels. It's pretty easy to contact your local blood donation centre and book a appointment. The place I go to are lovely ladies, you receive food and drinks-I mean good food, chocolate chip cookie anyone?!

Send a message:
If you have a friend or family member that is going through a hard time or has been busy with life. I think sending them a text, email or letter is a lovely way to say your thinking of them, so they know their not alone.

Donate clothes:
Donating clothes that you don't wear or in good condition is a great way of giving back, I do this regularly and find joy giving back. . Set a day to clear out your wardrobe, wash the clothes and head to your local charity place either salvation army or St Vinnie's. The feeling that there is always someone that would need clothes more than I wear them is a good feeling

Spread kindness:
Similar to sending a message, I believe spreading kindness is a excellent way to give back that can be done everyday or spare of the moment. Whether it's opening a door for a stranger or posting a positive quote on social media its important now than ever to spread kindness to others.

Friday Food File: Afghans Biscuits


Hi, how's it going?
Growing up my mum would bake  different kinds of cakes, biscuits slices etc. One of my favourite is Afghans biscuits. Their cocoa and cornflakes mixed together with a chocolate icing and coconut. It's so good, here's the recipe below:


Afghans Biscuits

Ingredients:
150g butter
1/3 cup of brown sugar
1 egg lightly beaten
1 teaspoon vanilla extract
1 cup plain flour
2 tablespoon of cocoa
1/3 cup coconut
1 1/2 cup of cornflakes

How to make it:
1. Preheat oven to 180c and lay out trays with baking paper.

2. Cream butter and sugar in a bowl, then add egg and vanilla beat until mixed together.

3.Add the sifted flour and cocoa along with cornflakes and coconut.

4. Once mixed together, put spoonful of mixture onto the oven tray. Then put in the oven for 20 minutes.

5. Then to make icing: add icing sugar, cocoa and abit of milk. Mix together until it becomes thick, adding milk at a small portion at a time.

6. Spread the icing over the biscuit and sprinkle or dip in coconut.
